Graduation Cake!!

This was a graduation cake made for a client rescently. The cake is a chocolate mud cake, made with bittersweet Callebaut Belgian chocolate filled with layers of chocolate ganache. The cake is covered with chocolate fondant.  A cake for true chocolate lovers!!

It is very important when using a lot of chocolate to use good quality chocolate as it makes such a difference in the taste.

The benefit of making a cake that is filled and coated with chocolate is that it can remain unrefrigerated. This is especially important if you have a function when  the cake may have to left unrefrigerated for a long period of time or when it is hot and humid.

I always urge my clients to make sure that their cake is served at room temperature. Just as cold Pizza doesn’t taste great a cold cake also looses a lot of it’s taste and softness.

Jeanette! First, I want to thank you from both myself, Victoria and her cast of pals for such a brilliant day! The girls loved learning and making their own cakes (not to mention be able to eat one of the most deliciously moist chocolate cakes I’ve ever had the pleasure to enjoy!). Personally, I can’t thank you enough for making the day easy for me but more importantly, so special for Victora. She told me that she will remember this party and wants to come back to you for her and I to make another yummy yet beautiful creation!
