Dariole Mould

A Dariole mould is a small aluminium beaker shaped mould that is used to make various baked and cooked foods. They are used most often to make individual cakes, puddings, creme caramel and savoury moulds like Timbale.

The word Dariole means “small, cylindrical mold.  It also refers to the dessert that is baked in the mold. Classically, the dessert is made by lining the mold with puff pastry, filling it with an almond cream and baking until golden brown. Today there are also savory darioles, usually made with vegetable or fish custards.  The possibilities are endless.

A dariole mould is also known as a Matfer or a  Baba mould which is used for making a traditional Polish cake known as a Baba Cake.  The Baba cake which is also often referred to as “babas au rhum” cake is made with a rich butter and yeast dough that contains fruits such as raisins, soaked in rum.

The Dariole Mould, Timbale mould, Baba mould,  call it what you like is available in various sizes ranging from 1.5 to 2.5″ tall and 1.75 to 2.5″ and holds between 4 and 6 oz.
